Application Progress of MALDI-TOF MS in Dairy Microbiology

Abstract: Microbial contamination runs through all aspects of the dairy industry,being a threat to economic development and human health. Effective control of microorganisms is an important concern of dairy quality and safety. MALDI-TOFMS technology has the characteristics of rapidity,accuracy,stability,sensitivity and low cost in dairy safety supervision,so it has received extensive attention and application. An in-depth understanding of the application approaches and strategies of MALDI-TOFMS technology in dairy microorganisms can effectively increase the quality and efficiency of dairy safety supervision. This review aimed to discuss the practical application of MALDI-TOFMS technique in dairy microbes,the development trend and application prospect of MALDI-TOFMS technology in dairy microorganisms were analyzed and explored,which provided a theoretical basis for the application of MALDI-TOFMS technology to deeply study dairy microorganism-related issues.
