Abstract

Chlorate and perchlorate,as persistent environmental pollutant,have become one of the hot issues in the field of international food safety in recent years.According to research reports,chlorate and perchlorate are widely found in the environment,agricultural products and food.Chlorate and perchlorate in milk and dairy products are one of the foods with high levels of human exposure.This paper introduced the sources and pollution status of chlorate and perchlorate in milk and dairy products,and elaborated and summarized the current progress of chlorate and perchlorate detection technologies in detail,with the aim of providing references for the establishment of chlorate and perchloric acid detection methods,the formulation of standards and the setting of pollution limits for chlorate and perchlorate in milk and dairy products in the future.
