Development of Dragon Fruit Grain Yogurt

Abstract: Dragon fruit grains were added to cereal yogurt,and the product formula and fermentation time were determined by single factor and orthogonal experiments. The sensory evaluation results showed that the milk was added with stabilizers(0.1% gelatin,0.1% pectin, 0.5% modified starch),2.0% grain flour,8.0% white sugar,2.0% probiotic inoculum,and the fermentation time was 5 h. Then add 10.0% dragon fruit granules,stir evenly,and then cool down and cool to obtain a dragon fruit granulated cereal yogurt product with rich fruit aroma,sweet and sour taste,uniform curd,and attractive color.
