Abstract: With consumers' concern for increased attention to A2 β-casein,A2 β-Casein related products are also constantly updated, Common detection methods for A2 β- casein include,reversed phase high performance liquid chromatography （RP-HPLC）, liquid chromatography high resolution tandem mass spectrometry,capillary zone electrophoresisrapid kit detection,etc.. This paper reviewed the functional characteristics,detection methods and quantitative analysis of β-Casein genetic variant A1 β-Casein and A2 β-casein in original form. The purpose is to explain the principle of detection method and the action mechanism of reagents and drugs,strengthen the improvement and optimization of A1 β-Casein and A2 β-casein detection method. It provided theoretical basis for the application of A2 β-casein in functional food,including milk base material and infant formula food.
