Matrix Assisted Laser Desorption/ionization Time of Flight Mass Spectrometry Method(MALDI-TOF MS)for Bacillus cereus Detection in Infant Food

Abstract: [Objective]To investigate three different methods for Bacillus cereus contamination in infant food.[Method]This paper detected Bacillus cereus in infant food with Matrix assisted laser desorption/ionization time of flight mass spectrometry method(MALDI-TOF MS),and compared with national standard method,VITEK 2 Compact and the real-time fluorescent PCR method. [Result]The qualitative results of the MALDI-TOF MS and the above three methods are consistent. The method is high accuracy,short time consuming and high precision,which is suitable for rapid identification of samples. [Conclusion]Through the test,it was found that the infant food have a higher contamination rate for Bacillus cereus,so the monitoring and supervision of this kind of products should be strengthened.
