Analysis of the Application of Aptamer in the Detection of Dairy Products

Abstract: China's dairy industry has developed rapidly,and the demand for testing has gradually increased. In recent years,with the improvement of laws and regulations related to food safety and the strengthening of supervision,there are many deficiencies in traditional dairy testing methods. Nucleic acid aptamers are widely used in food and medical fields. They have good biocompatibility,low immunogenicity,high stability and high specificity,and are conducive to the construction of detection systems. Nucleic acid aptamer is a single-stranded DNA or RNA molecule in exponential form. Using the specific recognition ability of the aptamer,fluorescence signals can be obtained by double-stranded DNA or RNA hybridization,which can be used to detect biological materials such as proteins,enzyme-linked immunosorbents and various enzymes. Compared with traditional detection methods,aptamers have the advantages of strong designability,simple and rapid synthesis,and low cost.
