Abstract: Shaanxi is a major birthplace of China's goat milk industry with a long history of goat milk culture. Based on its historical origins and geographical background,this study sorted out Shaanxi goat milk culture,discussed the technological characteristics of traditional dairy products such as milk cake and goat milk wine,summarized goat milk's significance in folk customs and diet,and puted forward new ideas for its modern development combined with the current industrial situation. Shaanxi goat milk culture formed with the Guanzhong farming civilization and northern Shaanxi pastoral traditions,and was later framed as "the homology of medicine and food" with "acid coagulation" and "fermentation" as technological features. With modern technology,it has developed from a local tonic to a specialty dairy,but its popularity lags behind cow 's milk. Promoting its modernization requires integrating living intangible cultural heritage inheritance with industrial technological innovation,providing reference for the protection and value transformation of traditional food heritage,with significant social and cultural value.
