Study on Detection of Sterilized Milk Furosine by Mid-infrared Spectroscopy

Abstract: [Objective]To develop a method to shorten the detection time of furosine content in the sterile milk,so as to improve the quality control efficiency of dairy products.[Method]This paper used mid-infrared spectroscopy technology combined with partial least squares method (PLS) to quantitatively analyze the content of furosine in samples,and realized the rapid and simple quantitative detection of trace furosine.[Result]This method is compared with the agricultural industry standard method NY/T 939—2016: Identification of Reconstituted Milk in Pasteurized Milk and UHT Pasteurized Milk,the quantitative detection method for furosine developed in this paper reduced the time of results from 2 days to 15 minutes. [Conclusion]The method has good repeatability,high precision and accuracy,meets the detection requirements,and has a good application prospect.
