Rapid Detection of Fat Globules Size in Ultra-high Temperature Sterilized Milk

Abstract: [Objective] In order to effectively monitor the homogenization effect,a rapid and effective method was developed to detect the size of fat globules in ultra-high temperature sterilized milk.[Method] Test procedures were designed with 8 dyes,sample testings were carried out,and test data were collected and analyzed.[Result] The phenomenon of fat globules size stained by different dyes was different. When using methyl orange staining method,the indicator and milk sample can be effectively fused,and the fat globules staining effect was good and the background interference impurities were less. When the other 7 indicators were used for staining,the indicators and milk samples could not be effectively fused,resulting in visible solid matter,poor staining effect and more background interference impurities were found during microscopic examination.[Conclusion] Through comparative analysis of experiments,methyl orange staining is an accurate,rapid and effective method,which can realize effective monitoring of fat globule size in the homogenization process.
