Research Progress on De-mutton Technology of Goat Milk

Abstract: As an important part of traditional dairy products,goat milk is favored by more and more consumers for its unique nutritional value and health benefits,but its distinctive muttony has become a major obstacle restricting its market popularization and consumer acceptance.In recent years,with the continuous progress of science and technology and the growing demand for healthy diet,the technology of goat milk de-mutton has been widely concerned and studied.This paper aimed to review the current research progress of goat milk de-mutton technology,and discussed its development trend,so as to provide reference for researchers and practitioners in related fields.
