The Influence of Packaging Form and Storage Temperature on the Number of Viable Probiotics in Infant Milk Powder

Abstract: The effects of packaging form and storage temperature on the activity of probiotics in infant milk powder were investigated.The milk powders of Bifidobacterium animalis in CO2 packaging,nitrogen packaging and ordinary packaging were stored at room temperature,37°C,and 50°C,respectively,and the number of viable probiotic bacteria in the milk powder was determined at different times.The results show that the packaging form and temperature have a greater impact on the stability of probiotic powder,and the product quality can be better maintained at room temperature.When the storage temperature rises by 30°C and above,the number of viable probiotic bacteria increases significantly with the increase in temperature reduce.At the same time the packaging test proved that nitrogen packaging is more conducive to the storage of probiotic milk powder.Probiotic milk powder is stored in nitrogen-filled packaging at room temperature for 2 years,and its viable cell count is greater than 1.0×106 CFU/g.
