Study on Nutritional Value,Health Function and Application of Camel Milk

Abstract: Camel milk is a milk with high nutritional value and health benefits. Camel milk is rich in contains fat,protein,vitamins,lactose and other nutrients,with biologically active substances that play a vital role in the human body,helping to treat diabetes,antioxidants,antibacterials and anticancer. However,the production of camel milk is very limited because of the differences in compositional content with cow's milk lead to the production process of cow's milk not being applicable to camel milk. Therefore,this paper reviews the nutritional composition and functions of camel milk,discusses the processing and production technology of camel milk products,and analyses the research direction to improve its quality,so as to provide a reference for further related research and development and application of camel milk.
