母乳是婴儿最完美的食物,含有婴儿发育所需的所有蛋白质、脂质、碳水化合物、微量元素,同时含有亚硝酸盐、硝酸盐等无机物。与婴幼儿配方乳粉(简称“婴配粉”)相比,母乳中富含亚硝酸盐,特别是初乳中含有较高浓度的亚硝酸盐,其对新生儿的生长发育具有重要的生理功能。最近的数据表明,母乳中亚硝酸盐含量与婴配粉中亚硝酸盐含量之间的差异可能是造成母乳喂养婴儿与婴配粉喂养婴儿在某些健康方面差异的原因。本文综述了母乳中硝酸盐、亚硝酸盐及其对婴儿健康影响方面的研究成果,为人们重新认识硝酸盐、亚硝酸盐在母乳及婴配粉中的作用具有一定的指导意义。
Breast milk is nature's the most perfect food. It contains all the proteins,lipids,carbohydrates,trace elements required for infant development,as well as inorganic substances such as nitrite and nitrate. Comparison to infant formula,breast milk is rich in nitrite,especially colostrum,which has important physiological functions for the growth and development of newborns. Recent data showed that the difference between nitrite content in breast milk and infant formula may be the cause of some health differences between breast fed and formula fed infants. This paper reviewed the research results of nitrate and nitrite in breast milk and their effects on infant health,that provided some guidance for people to reunderstand the role of nitrate and nitrite in breast milk and infant formula.
