Hazard and Cause Analysis of Perchlorate Chlorate in Milk and Dairy Products

Abstract: Perchlorate and chlorate are ubiquitous pollutants in various types of foodstuffs, including milk and dairy products.widespread and large application of perchlorate has led to its ubiquitous occurrences in major environmental compartments, especially aquatic systems such as groundwater,drinking water , surface water , fruit juices,vegetables and dairy milks. perchlorate enters our bodies through various pathways, including diet and inhalation. The presence of chlorate in milk and dairy products can arise from the use of chlorinated water and chlorinated detergents for cleaning and sanitation of process equipment at both farm and food processor level.perchlorate and chlorate have been associated with inhibition of iodine uptake in humans and the formation of methemoglobin, with infants and young children being a high-risk demographic. This paper reviewed the hazards of perchlorates and chlorates to the human body, as well as the possible reasons for the increased content of perchlorates and chlorates in milk and dairy products.
