本文主要探讨了干法工艺生产的母乳营养补充剂在加速试验条件下各营养素的贮存稳定性。结果表明,在加速试验条件下,样品中的蛋白质、脂肪、碳水化合物、牛磺酸及左旋肉碱均未发生衰减;加速试验结束时,维生素A、维生素B1、维生素B12、叶酸、泛酸、维生素C平均衰减率分别为15.57%、17.98%、15.52%、12.17%、16.29%、22.51%;矿物质铁、碘平均衰减率分别为12.20%、19.67%;可选择性成分胆碱、肌醇平均衰减率分别为13.73%、18.98%。通过此试验研究,可以为母乳营养补充剂产品的设计研发提供一定的数据支持。
This paper mainly discussed the storage stability of nutrients in human milk fortifier produced by dry process under accelerated test conditions. The results showed that under the accelerated test conditions,the protein,fat,carbohydrate, taurine and L-carnitine in the sample did not decay;at the end of the accelerated test, the average decay rates of vitamin A,vitamin B1,vitamin B12,folic acid,pantothenic acid,vitamin C were 15.57%,17.98%,15.52%,12.17%,16.29% and 22.51%,respectively. The average decay rates of mineral iron and iodine were 12.20% and 19.67%,respectively. The averaged decay rates of the optional components choline and inositol were 13.73% and 18.98%,respectively. This experimental study can provide data support for the design and development of human milk fortifier.
