[目的]以2021年从安徽、浙江、福建牧场收集生乳为研究对象,探究季节等因素对生乳体细胞数（SCC）、蛋白质含量、脂质含量及菌落总数影响,及SCC与蛋白质含量、脂肪含量及菌落总数的相关关系。[方法]通过乳成分分析,获得生乳SCC、蛋白质含量、脂质含量及菌落总数。用相关分析法探究乳成分变化趋势及相关性。[结果]SCC、蛋白质含量、脂质含量及菌落总数变化趋势受气候影响较大,生乳SCC与产奶量显著负相关、与蛋白质含量显著负相关、与脂肪含量显著负相关、与菌落总数显著正相关。[结论]温度、湿度是影响生乳SCC及乳成分含量的重要因素,应控制生乳SCC,进一步优化牛奶品质。

[Objective]To explore the effects of season and other factors on somatic cell number,protein content,lipid content and total number of colonies,and the relationship between somatic cell number and protein content,fat content and total number of colonies,and the relationship between somatic cell number and protein content,fat content and total number of colonies.[Methods]The number of milk-producing somatic cells, protein content,lipid content and total number of colonies were obtained through milk composition analysis.The correlation analysis method was used to explore the trend and correlation of milk composition.[Results]The change trend of somatic cell number,protein content,lipid content and total number of colonies was greatly affected by climate,and the number of mammary cells was significantly negatively correlated with milk production,protein content,fat content,and total colonies.[Conclusion]Temperature and humidity are important factors affecting the number and content of raw milk cells,and the number of raw milk cells should be controlled to further optimize milk quality.
