摘要

乳制品富含适合微生物生长所需的营养物质,易受微生物污染。微生物污染尤其是霉菌和酵母污染是乳制品生产中的一大难题。实施最佳的杀菌方法固然至关重要,但工作环境的管理同样不容忽视。乳制品车间的环境是保障食品质量的重要因素,确保各项空间参数在食品加工中保持稳定非常重要。然而,在日常工作中,由于空间体积庞大、设备布局紧凑和工作流程复杂等多种因素相互影响,空间空调机组所设置的环境参数并不总是与每个位置的实际数值相符,因此车间的空间数据始终处于动态平衡状态。如何有效减少空间温湿度、压差、风量、酸碱性的异常波动,以及如何实施更精细化的控制措施,是空间环境管理面临的一大挑战。本研究通过引入数据采集系统,实现对车间环境的精确控制,以最大程度控制霉菌和酵母的生长,保障产品质量。

Abstract

Dairy products are rich in nutrients suitable for microbial growth and are susceptible to microbial contamination. Microbial contamination,especially fungal and yeast contamination,is a major problem in dairy production. While the implementation of optimal sterilisation methods is essential,the management of the operating environment cannot be ignored. The environment of dairy workshops is an important factor in ensuring food quality,and it is very important to ensure that the spatial parameters remain stable in food processing. However,in daily operation,due to the interaction of many factors such as large volume,compact equipment layout and complex workflow,the environmental parameters set by the space air conditioning unit are not always consistent with the actual value of each location,so the spatial data of the workshop is always in a dynamic balance state. Therefore,how to effectively reduce the abnormal fluctuations of space temperature and humidity,pressure difference,air volume,acidity and alkalinity,as well as how to implement more refined control measures,is a major challenge for space environment management. In this study, a data acquisition system was introduced to achieve precise control of the workshop environment, in order to control the growth of fungal and yeast to the greatest extent and ensure product quality.
