Analysis of Urban Household Cheese Consumption Behavior and Influencing Factors under Consumption Upgrade——Based on survey data of dairy consumption in 6 cities across the country

Abstract: In recent years,the domestic Western catering,baking and other new formats show a rapid momentum of development,cheese based dry dairy products accounted for the proportion of Dairy consumption in China increased year by year,cheese consumption growth potential is great,China's cheese market will enter a golden period of development. Based on the micro data of 3 000 milk consumption surveys in 6 typical cities in China, this study summarized the current status and heterogeneity characteristics of cheese consumption of Chinese residents. Finally,three suggestions were put forward to promote cheese consumption in China and the transformation from "drinking milk" to "eating milk". Firstly,to popularize the nutritional value of cheese through multiple channels and increase the recognition of residents; secondly,to increase the variety of student milk products and cultivate cheese consumption habits from childhood; thirdly,to develop milk tofu and other specialty cheeses enriching consumers’ choices.
