Determination of Furosine in Milk by High Performance Liquid Chromatography

Abstract: Detecting the furosine content in milk can evaluate the heat treatment strength of milk. The HPLC method was established to determine the content of furosine in milk,using a wavelength of 280 nm. The test results showed that:using the method of external standard quantitative,the concentration was 0.06~4.00 mg/L,the absorbance and the mass concentration of furosine had a good linear relationship,and the correlation coefficient was R2=0.999 7;When the samples with furoate at protein levels of 5.00 mg/L,10.00 mg/L,15.00 mg/L and 30.00 mg/L,their recovery rate were between 91.48% and 91.73%,and the RSD value were between 0.13% and 0.37%. The detection limit was 1.5 mg/100g protein,the deviation was less than 1.00%. It is suitable for daily testing of furosine in dairy enterprises.
