Advances in the Application of Electronic Noses in the Detection of Dairy Products

Abstract: As an odour fingerprinting technique based on comprehensive odour information,the electronic nose has become a popular testing technique for milk and dairy products due to its many advantages such as being fast,non-destructive,convenient,effective and objective. Combined with conventional instrumental analysis and sensory evaluation methods,electronic noses have been studied more in the areas of odour information related to dairy adulteration, composition detection,and quality changes in dairy products during processing and storage, providing an effective guarantee for the dairy market to monitor the quality and safety of dairy products. This paper summarised the research progress in the application of electronic nose in the identification of dairy flavour components,freshness detection of milk and dairy products, monitoring of dairy processing,adulteration detection,etc.,and outlooked further research directions in the application of electronic nose technology in milk and dairy products,aiming to provide a reference for rapid detection in the quality and safety of milk and dairy products,etc.
