鼠李糖乳杆菌在发酵乳中的应用

摘要: 发酵乳是益生菌的重要载体,可保护菌株免受环境影响。鼠李糖乳杆菌是目前国际上文献记载最多、应用最广的益生菌之一。该菌耐酸性强,可在人和动物肠道内定植,具有降低胆固醇、预防和治疗腹泻、排除毒素、预防龋齿和增强免疫力等作用。但鼠李糖乳杆菌在发酵乳制品中发挥的作用及功能的研究和资料相对匮乏。综述了鼠李糖乳杆菌在发酵乳中的作用特点,以期为进一步探索鼠李糖乳杆菌在发酵乳制品的研究和开发打下理论基础。
