Abstract: With the increasing improvement of people's living standards,the demand for dairy products is also increasing. Dairy products have become an indispensable food in people's daily life. How to ensure the quality and safety of dairy products and provide high-quality dairy products to the masses has also become the goal of dairy workers. With the continuous progress of science and technology,more and more new technologies have been introduced into the production and processing of dairy products. In recent years,many newly built dairy plants have adopted the intelligent production mode,especially the use of MES system in the production and processing process,which has greatly improved the production efficiency,product quality stability and safety,and is an indispensable part of the traceability of dairy products. This paper introduced the application of MES system in liquid dairy production,and further explained the important role of MES system in the quality improvement and traceability of dairy products.
