Verification of CIP Cleaning Effect in Yogurt Production System

摘要: 消费者对产品质量、口感要求逐年严苛。生产设备多样化、复杂性、清洗效果对产品质量存在很大影响。确保乳制品生产过程质量,探讨设备清洗效果,减少产品零星变质,降低批次性质量事故。本文研究生产工艺流程、设备清洗步骤、清洗参数设置、清洗隐患点判定,制定合理的设备清洗参数,掌握设备工艺流程。经过设备工艺的梳理、识别隐患点,完善相应参数,有效改善产品的质量问题及批次性质量问题。通过此方法的推行,开展设备的清洗效果验证,有效提升产品质量。

Abstract: Consumers have strict requirements for product quality and taste year by year. The diversification, complexity and cleaning effect of production equipment have a great impact on product quality. Ensure the quality of the dairy production process, discuss the cleaning effect of equipment, reduce sporadic deterioration of products, and reduce batch quality accidents.In this paper, the production process, equipment cleaning steps, cleaning parameter setting, and cleaning hidden danger point judgment were studied, and reasonable equipment cleaning parameters were formulated to master the equipment process. After combing the equipment and technology, identifying the hidden danger points, and improving the corresponding parameters, the quality problems and batch quality problems of the products were effectively improved. Through the implementation of this method, the cleaning effect of the equipment can be verified and the product quality can be effectively improved.
