摘要: γ-氨基丁酸(Gamma-Amino Butyric Acid,GABA)是一种非蛋白质氨基酸,为人体中枢神经系统中最关键的抑制性神经递质,具有降低血压、改善脑机能、抗惊厥等功能。综述近年来分离于乳及其发酵制品具有产GABA作用的乳酸菌,及其在发酵乳制品中应用方取得的进展,以供参考。
