摘要: 高血压是对人体危害极大的慢性疾病,易引发多种并发症。目前降血压药物大多化学合成,服用后易损伤机体脏器,有较多毒副作用。牛乳营养价值高、富含较多蛋白质,酶解后产生大量生物活性多肽,能提高抗氧化能力。牛乳经酶解后能够产生大量抑制血管紧张素转换酶(ACE)活性的多肽,其无生物毒性,具有舒张血管,降低血压的作用,能够有望用于制备降血压药物。因此,本文对高血压危害、ACE抑制肽作用机制、牛乳中ACE抑制肽研究进行综合概述,有助促进ACE抑制肽商品化和工业化,实现牛乳高价值利用,推动乳业发展。
