防错技术在液体乳安全风险管控中的应用和实践

Application and Practice of Error-proofing Technology in Liquid Milk Safety Risk Management

摘要: 防错系统的建立和完善是乳品企业减少失误和损失的关键方式,是“零质量缺陷”实现的重要抓手。本文通过对PRP(前提方案)与HARPC(危害分析以及基于风险的预防性控制)路径防错系统的阐述,结合乳品企业防错改善最佳实践,提出从配料防错及设备异常两大关键质量缺陷发生点进行改进,为乳制品行业防错系统的完善提供思路,为相近质量缺陷问题解决提供借鉴和参考。

关键词: 防错, 前提方案, HARPC, 食品安全

Abstract: The establishment and improvement of the error-proofing system is the key path for dairy enterprises to reduce errors and losses,and it is an important starting point for the realization of "zero quality defects". Based on the elaboration of the path error-proofing system of PRP(premise scheme)and HARPC(hazard analysis and risk-based preventive control),combined with the best practices of error-proofing and improvement of dairy enterprises,this paper proposes to improve the two key quality defect occurrence points of batching error-proofing and equipment abnormality,so as to provide ideas for the improvement of the error-proofing system in the dairy industry and provide reference for the solution of similar quality defects.
