    As a leading dairy enterprise in Xinjiang, Xinjiang Tianrun Dairy Co.,Ltd.,(short for “Tianrun Dairy”)needs to improve its profitability if it wants to win a favorable position in the national market. Based on DuPont analysis system, this paper analyzed the financial data of Tianrun Dairy from 2018 to 2022, and puts forward suggestions on the problems existing in its profitability, so as to provide reference for other dairy enterprises.

    Milk production of western dairy developed countries in the past three years did not rise significantly caused by the rise of milk prices, which reflects the maturity of dairy industry. The reduction of export pressure to China also vacated some space for the development of China's milk production. From 2019 to 2023, China's milk production achieved a compound annual growth rate of 7%, far exceeding the average milk consumption growth rate of 4% in the past 15 years, resulting in an oversupply of raw milk and large-scale losses for farms in 2023, and the "cow cycle" has fluctuated significantly. It is expected that the industrial depression period will continue for about 2 years, and the internal industrial structure of the dairy farms will continue to adjust, and small and medium-sized dairy farms will bear the brunt, which requires the industry to pay close attention and work together to overcome the difficulties. In the medium term, the annual growth of 100,000 to 150,000 dairy cattle can meet the growth of milk consumption in China. During the adjustment period, industrial innovation can be made in the aspects of reducing dairy cow, optimizing herd structure, promoting the combination of dairy farming and crop, and optimizing dairy product processing structure.

    With the development of social and economic level,the health consciousness of Chinese people is getting stronger and stronger,and the dairy industry has received great attention from consumers.As one of the top 20 companies in China's dairy industry,BYM Group has developed strongly since its establishment,focusing on the research and development and sales of baby food.This paper collected the financial data from 2018 to 2022 and used the DuPont analysis Method to analyze the profitability of BYM Group.The research found that the main factors affecting the profitability of BYM Group were the relatively high proportion of operating costs and sales expenses in total revenue,and put forward reasonable suggestions to this end.At the same time,it hopes to provide references for other dairy enterprises.

    The proposal of “Dual-carbon target” has made all major industries step into the wave of transformation,and the financial performance level formed after low-carbon environmental protection,energy saving and emission reduction has become a more concerned issue for enterprises. This paper took Yili Group,a representative dairy company in China,as the research object. After determining the weight of its financial indicators using the entropy weight method and conducting a dual analysis of the ESG evaluation system,it finally summarized the effective measures to improve the financial performance of the company,and then gave inspiration to the Chinese dairy industry.

    In the process of the development of dairy industry, there are new challenges, among which disease is the most serious impact, and it not only affects the growth and yield of cows, but also poses a threat to human health. In order to promote the development of dairy farming industry in China, this paper aims at the current common disease types in large-scale dairy farms, such as cow mastitis, mycoplasma pneumonia, limb and hoof disease, reproductive disorders, taking the clinical manifestations of diseases as the starting point, and proposes the correct disease prevention and treatment methods. The results provide a theoretical reference for the accurate identification, prevention and treatment of diseases, reduce the impact of diseases on the growth and yield of dairy cows and milk products as much as possible, and promote the development of dairy farming industry in the direction of intensification and modernization.

    Management accounting is an enterprise accounting branch that focuses on providing enterprises with optimal decision-making, improving operation and management, and improving economic benefits. It uses financial reporting, planning, performance and control, strategic financial management and other tools to make decisions for current economic activities and forecast and plan for the future on the basis of the financial operation data of enterprises in the past. Under the background of digital transformation, China's large group listed companies have begun to apply economic added value (EVA), strategic map and other management accounting tools to promote the information flow between business flow and financial flow, and improve the quality of enterprise management. This paper selects Mengniu Group as the research object. Firstly, it analyzes the implementation of the strategic map of Mengniu Group from four aspects: finance, customers, internal process, learning and growth. Secondly, it analyzes the application effect of management accounting under the background of the integration of industry and finance, and finds management accounting is helpful to improve the operation efficiency, profitability and sustainable growth of enterprises. At the same time, the growth rate of management costs can be slowed down year-on-year.

    Adulteration has always been an important factor affecting the quality and safety of dairy products. From the initial adulteration of nitrogen, vegetable protein, melamine and other substances into dairy products, to the current adulteration of low-priced milk into high-priced milk for sale, various adulteration problems emerge one after another. It is particularly important to develop fast, efficient and high-quality dairy adulteration detection technology. At present, the common detection techniques are basically based on the characteristics of fat, protein and nucleic acid in milk. In this paper, electrophoresis, near infrared spectroscopy, liquid chromatography, gas chromatography, enzyme-linked immunosorbent assay, low-field nuclear magnetic resonance and so on in dairy detection technology are comprehensively summarized to promote the development of dairy adulteration detection technology and ensure the quality and safety of dairy products.

    Ketosis in dairy cows represents a major challenge confronting China's dairy farming industry, with its high incidence posing a threat to the stable development of the sector. This paper thoroughly explicate the classification, consequences, clinical manifestations, and etiology of ketosis in dairy cows, concurrently engaging in an in-depth exploration of diagnostic technologies. Dairy cow ketosis is categorized into subclinical and clinical forms based on β-hydroxybutyrate levels. The disease exerts profound impacts on cow health, milk production, milk quality, and reproductive performance, thereby escalating operational costs and risks for dairy farms. Its multifarious causes encompass energy metabolic imbalance, periparturient diseases, dietary factors, starvation conditions, and specific nutrient deficiencies, all intimately associated with dysregulations in glucose, lipid, protein metabolism, and hormonal regulation. In the realm of diagnosis, the article present diverse methods, encompassing qualitative detection (ketone powder method, reagent method, test strip method) and quantitative detection (salicylaldehyde colorimetry, spectrophotometry, gas chromatography). This research furnishe a comprehensive knowledge base and technological guidance for the effective prevention and control of ketosis in dairy cows, thereby contributing to enhanced health management and sustainable development within the dairy farming industry.

    With the development and growth of the dairy cattle industry,viral respiratory diseases in cattle continue to occur,and the difficulty of prevention and control is increasing.The incidence rate and mortality of infectious bovine rhinotracheitis in China's agricultural and pastoral areas are gradually rising,which has caused significant economic losses to dairy farmers.This article summarized the etiology, epidemiology,clinical manifestations, laboratory diagnosis,and other aspects of the disease,and proposed that we should strengthen the level of breeding management,strictly implement quarantine at the place of origin,do a good job in slaughtering according to laws and regulations,standardize the transportation and introduction of species,and attach importance to the construction of biosecurity system. It is hoped that this article can provide reference for better prevention and control of bovine infectious rhinotracheitis and increase the economic benefits of pastures.

    Perchlorate and chlorate are ubiquitous pollutants in various types of foodstuffs, including milk and dairy products.widespread and large application of perchlorate has led to its ubiquitous occurrences in major environmental compartments, especially aquatic systems such as groundwater,drinking water , surface water , fruit juices,vegetables and dairy milks. perchlorate enters our bodies through various pathways, including diet and inhalation. The presence of chlorate in milk and dairy products can arise from the use of chlorinated water and chlorinated detergents for cleaning and sanitation of process equipment at both farm and food processor level.perchlorate and chlorate have been associated with inhibition of iodine uptake in humans and the formation of methemoglobin, with infants and young children being a high-risk demographic. This paper reviewed the hazards of perchlorates and chlorates to the human body, as well as the possible reasons for the increased content of perchlorates and chlorates in milk and dairy products.

    Bovine infectious rhinotracheitis is a disease that has a great influence on dairy farming.It will not only lead to the decrease of milk production of cow,but also lead to complications such as meningitis,metritis and sinusitis,which can easily lead to miscarriage or stillbirth.This disease is widely spread all over the world,which has caused serious harm and brought great losses to cow breeding industry.Therefore,in order to control the disease,it is necessary to increase the understanding of bovine infectious rhinotracheitis virus and master its basic characteristics and epidemic characteristics.In this paper,the morphological structure,physical and chemical properties and genomic characteristics of bovine infectious rhinotracheitis virus are comprehensively summarized,and the existing diagnostic methods are comprehensively expounded.At the same time,the current epidemic situation of the disease is introduced,so as to promote the prevention and control of the disease and provide theoretical support for the prevention and diagnosis of bovine infectious rhinotracheitis.

    Analysis of Nutrition and Feeding Management Status of Dairy Cows in Scale Dairy Farms in China

    In order to further understand the current status of nutrition and feeding management of dairy cows in large-scale dairy farms in China, this study was based on the investigation of feed raw material planting, feed formula production, cow comfort level and performance measurement of 320 large-scale dairy farms in 23 provinces (autonomous regions, municipalities) in China, and compared and analyzed the current status of nutrition and feeding management of dairy cows in different sizes and regions. The planting bases of dairy farms in different scales and regions were quite different, but they were mainly planted silage corn. The feed formulation of dairy farms is mainly designed by full-time nutritionists on pasture and premix enterprise nutritionists, and the application of environmentally friendly feed is diverse. At present, sand and cow manure are the main bedding materials for bed rest in dairy farms, and more attention is paid to improving the comfort of cows by improving the bed rest conditions. The acceptance of DHI among surveyed dairy farms is generally high, and the larger the scale of dairy farms, the better the implementation of DHI testing. It is suggested to select suitable feed raw materials according to the regional characteristics and strengthen the promotion and training of high-quality silage production technology. In production, we should give full play to the synergistic use effect of environmentally friendly feed additives and improve feed utilization efficiency. It is necessary to further improve the application of DHI measurement in small and medium-sized dairy farms, complate the basic production data information, and provide scientific basis for dairy farms to improve feeding management.

With the development of economy and the improvement of national health consciousness, the consumption market of dairy products in China has a broad prospect. This paper takes 22 dairy companies listed on Shanghai and Shenzhen stock exchanges as research samples, constructs an evaluation system of financial performance indicators of the dairy industry through principal component analysis and factor analysis, comprehensively evaluates financial performance, and puts forward development suggestions to provide reference for related enterprises and guide the healthy development of the dairy industry.

    [Objective] With fresh milk as the main raw material and different sugar alcohols as the auxiliary materials, solidified yogurt was made respectively. [Method] The sugar alcohols include xylitol, erythritol, maltitol, sorbitol, mannitol and lactitol. Taking fermentation time, water holding capacity, dehydration shrinkage sensitivity (STS), sensory evaluation and texture parameters as evaluation indexes, the effects of different sugar alcohols on the quality of solidified yogurt were investigated. [Result] The fermentation time of lactitol sample was longer, and the fermentation time of other samples was between 4.5~5.5 hours. The change trend of water holding capacity and dehydration shrinkage sensitivity (STS) echoed, and mannitol, sorbitol, xylitol and erythritol ranked high. The total sensory evaluation scores of xylitol, sorbitol and erythritol ranked in the top three, which was consistent with the texture parameters. The texture quality of xylitol, sorbitol and erythritol was better. [Conclusion] Sugar alcohols can be applied to solidified yogurt, but the tissue status and texture quality of the product need to be strengthened.

It not only plays a role in nutritional regulation, but also regulates the reproductive capacity, immunity and growth performance of dairy cows. In this paper, the research progress of the effects of rumen protected methionine supplementation on the production performance and immunity of dairy cows during perinatal period was reviewed, in order to provide a theoretical reference for the scientific application of rumen - protected methionine products in dairy cows during peripartal period.

    Goats are herbivores. The main feeding method is grazing, which leads to susceptibility to parasites and disease. Dairy goats have long gestation and lactation periods. Deworming drugs are generally prohibited for the first trimester and lactation. Regular or planned deworming should be avoided during pregnancy and lactation, which leads to more severe parasitic diseases in dairy goats. The common parasitic diseases in dairy goats include gastrointestinal nematodiasis, lungworm disease, cerebrospinal filariasis, taeniasis and so on. This paper focused on several common internal parasitic diseases of dairy goats and their prevention and treatment measures.

    Dairy industry is essential to a healthy China and a strong nation. As the primary link of dairy products development, its upstream dairy industry largely determines the development scale and quality system of dairy products in China. At present, although China's milk production is in the forefront, but facing the complex global market, the dairy farming industry still faces great challenges. In this paper under the background of dairy products related policy introduced, explore the history of dairy farming industry history and direction, according to the regional division industry module, establish relevant mathematical model, using the social network analysis method summarizes the characteristics of space network between provinces, explore the influencing factors of the development of dairy farming industry in China. Finally, four industry-related influencing factors were obtained, and suggestions were given based on the characteristics of spatial network development in China in the past 15 years.

    At present, the dairy market, milk source surplus, milk prices continue to fall, and dairy consumption is weak, which is a typical feature of the down cycle. In the down cycle, involution has become the main theme of market competition, and the industry is welcoming a new round of reshuffle, which will pose a severe test for SMEs. This paper analyzes the dairy market in the first quarter from the perspective of the third party, in order to provide some reference value for dairy enterprises to understand the current industry situation. The main contents include: industry fundamentals in the first quarter, interpretation of industry data in 2023, overview of some listed dairy enterprises' annual reports in 2023, dynamic analysis of industries/enterprises in the first quarter, and evaluation of key new products in the first quarter.Innovation is particularly important for the survival and development of enterprises in the economic downturn, but the success rate of innovation is bound to be lower than that in the economic upswing. Only by conforming to the law of consumer cognition, doing a good job in category innovation and creating a large single product to establish brand cognition can dairy enterprises cross the cycle and grow into excellent brands.

    This paper delved into the development path of China's dairy industry from the perspective of the entire industry chain,using Junlebao Dairy Group. as a case study. It begined by meticulously analyzing Junlebao's full industry chain model,uncovering its development experiences in areas such as breeding,processing,and marketing. Subsequently,the paper comprehensively examined the current challenges faced by China's dairy industry from three aspects:the upstream breeding link,the midstream processing link,and the downstream product market. These challenges include the instability of milk source quality,the complexity of cost control,and the fierceness of market competition. Based on this analysis,the paper proposed a series of targeted development suggestions,such as strengthening the construction and quality control of upstream milk sources,promoting innovation in midstream production and processing technology, expanding downstream sales channels and enhancing brand building,as well as fostering synergy among various links of the industry chain and upgrading the industry as a whole. The aim is to provide theoretical support and practical guidance for the sustained and healthy development of China's dairy industry.

    In order to improve the effect of prevention and treatment of cow mastitis,this paper studied the diagnosis,treatment and comprehensive prevention of cow mastitis. Starting from the causes of mastitis,the causes of mastitis were summarized as pathogenic microorganisms,seasonal changes,environmental conditions and self-induced factors,which were divided into clinical mastitis and recessive mastitis,and different types of mastitis diagnosis methods,treatment methods and comprehensive prevention methods were proposed. The diagnostic methods of dairy cow mastitis included clinical symptom diagnosis,etiology detection, milk cell detection, physical detection,chemical detection,milk conductivity detection,etc.,and the detection results were highly accurate.The treatment methods included western medicine therapy,Chinese medicine therapy and other therapies,all of which could achieve good therapeutic effect. A number of comprehensive preventive measures were put forward,such as improving feeding environment,strengthening feeding management,strengthening milking norms,doing a good job in scientific prevention,reducing stress reaction and rational drug prevention. Dairy cow mastitis is a common disease in dairy cow breeding. During the breeding period,timely diagnosis and accuracy of diagnosis results should be ensured,corresponding treatment methods should be adopted,and comprehensive prevention should be done,so as to provide theoretical guidance and basis for reducing the incidence and improving the control effect,and promote the development of dairy cow breeding in China.

    To explore the current development status and evolutionary trends of dairy products research in China recently, this work selected 4 784 dairy products related literature based on the China National Knowledge Infrastructure (CNKI) database, and used the CiteSpace tool for bibliometric analysis of knowledge graphs of institutions, authors, keywords, research frontiers, and other information to study the hotspots and development of the dairy industry. The results showed that: from 2000 to now, the publication situation in the field of domestic dairy products research can be divided into a period of high speed growth and a period of stable development. The research content has shifted from the technical field to more focused on industrial development related content. Some authors have formed a relatively close core author group, but most authors are still in a dispersed and independent publishing state. The keywords focus on fermentation technology, dairy industry development, relevant policies, dairy products and application fields. At the research frontier, dairy-related research has shown a trend of paying more attention to the dairy industry chain, process optimization and analysis of related influencing factors, based on the continuous improvement of testing technology. This article present the research status of the domestic dairy industry in the past 20 years through visual organization of relevant literature, from multiple aspects such as publication volume, etc., providing theoretical basis, reference and direction guidance for future research and industry development of dairy products.

    [Objective] According to the first method in GB 5009.92-2016 Determination of Calcium in Food under National Food Safety Standard,the content of calcium in milk was determined by flame atomic absorption spectrometry and its uncertainty was evaluated. [Method] A mathematical model was established to analyze the source of uncertainty in the measurement process, quantify the evaluation, and calculate the synthetic relative standard uncertainty and extended uncertainty. [Result] When the confidence probability P is 95%, the extended uncertainty of calcium content is 3.22 mg/100g, that is, the determination result of calcium content in the milk is X=(123.80±3.22)mg/100g. [Conclusion]The main sources of uncertainty are the preparation of the standard working curve solution, the fitting of the standard working curve and the determination repeatability. The evaluation results of uncertainty can provide a reference for the accuracy of determination of calcium content in milk by flame atomic absorption spectrometry.

    Separation and Purification of Milk Derived Glycomegapeptide and β-Casein

    [Objective]The milk-derived glycomacropeptide(CGMP) was obtained by enzymatic hydrolysis of cow's milk using rennet.Due to the tolerance difference of CGMP to trichloroacetic acid,the separation and purification of CGMP was realized. The β-casein was separated from the casein hydrolyzed by rennet by the characteristic that β-casein was easily freed under low temperature and low acid conditions.[Method]The defatted fresh milk was fully enzymatically hydrolyzed by adding an appropriate amount of rennet at 35 ℃,and centrifuged to obtain the supernatant and precipitate. Trichloroacetic acid was added to the supernatant to remove the impurities of CGMP,and the purity of the obtained precipitated CGMP was measured by high performance liquid chromatography.The precipitation was redissolved in alkaline and the temperature was lowered.Then the pH value was adjusted to 3.5 under the condition of low temperature throughout the whole process.The supernatant was collected by centrifugation at low temperature.After that,the temperature was raised to 35 ℃ to gain β-casein with centrifugation at room temperature.Its purity was determined by high performance liquid chromatography.[Result]3% trichloroacetic acid could better remove impurities after CGMP enzymatic hydrolysis.CGMP was completely precipitated by 10% trichloroacetic acid.The purity of the final CGMP product was 80% to 90% and the β-casein with treatment of low temperature and low acid had a purity of 85% to 90%.

This paper analyzesd that since 1949,China's dairy industry has experienced the embryonic stage of production technology (1949-1978),the rapid development of mechanization (1979-2007),the adjustment period of modern dairy industry structure (2008-2017),and the jump period of high-quality development (2018-present).Scientific and technological innovation has played a leading role in industry innovation,from the initial mechanized application to improve production efficiency,to the subsequent sterilization technology and filling technology to promote the expansion of the industry scale, and then to the introduction of intelligent technology to make Chinese dairy enterprises among the world's advanced level. The history showed that scientific and technological innovation is of great significance to enhance the international competitiveness of China's dairy industry and realize industrial upgrading and structural optimization.
