In this context,the issue of how dairy listed companies can respond to market changes,enhance their profitability,and then develop and grow has attracted great attention. Especially,this paper took Yantang Dairy as an example,using the classic DuPont financial analysis system to deconstruct the specific drivers that affect its profitability improvement,identify existing problems,and propose solutions,providing some reference for enterprises to improve their profitability.

    Milk is rich in a variety of essential nutrients for human,which plays an important role in the growth and development and immunity. In addition to cow’s milk,buffalo milk,horse milk,camel milk,goat milk,donkey milk,yakmilk and other characteristic milk have gradually entered people's vision. At the same time,human milk is the most natural and ideal food for infants. It is the main source of nutrients for infants in the early stage. It contains rich nutrients and bioactive ingredients. In order to better compare the differences and advantages of these seven kinds of common animal milk and human milk,this paper summarized their differences in the composition of lactose,fat,protein,minerals,vitamins and other nutrients,which found that yak milk has the highest protein content and rich amino acid types,the lactose content of horse milk was the highest,the fat content of camel milk was higher,and the water-soluble vitamin content was also the highest,donkey milk has the characteristics of low fat and high lactose.

    Research Progress on Diagnosis and Treatment of Mastitis in Dairy Cows

    Mastitis is an important disease in the dairy industry that can reduce milk production and quality, increase treatment and prevention costs, and cause economic losses to farms. The disease has various causes, including infections by pathogens such as bacteria, viruses, and mycoplasma. Clinical symptoms are complex and require specific laboratory methods for accurate diagnosis. Traditional diagnostic methods for mastitis have low accuracy, while molecular biology testing shows great development prospects. Techniques such as microbial culture kits and loop-mediated isothermal amplification (LAMP) are expected to improve the accuracy of mastitis diagnosis and treatment precision. Antibiotics are commonly used for treatment, but they can easily cause bacterial resistance and drug residue problems. Therefore, new drugs are needed for mastitis treatment. Recent studies have shown that bacteriophages may be used as alternatives to treat mastitis, and some plants and their derivatives have antibacterial properties. Natural secretion factors such as lactoferrin and phospholipase A2 also have therapeutic potential, but further research is needed. This paper summarized the current research status of diagnostic and treatment methods for mastitis in dairy cows and provides references.

    Dairy cow haemolactia is a disease caused by the hyperemia of blood vessels in the tissues around the milk transfusion tube and the acinus in the milk of the cow,and the obvious expansion and rupture of the blood vessel wall,which causes the hemoglobin or red cells in the blood vessels to enter the milk transfusion tube and the acinus,so that the secreted milk is mixed with red blood and blood clots. Generally,the disease can be cured by improving the feeding and management conditions,but the serious cases need to be treated with drugs,otherwise it will induce other diseases such as mastitis of dairy cows,resulting in the decline of milk production and even death of dairy cows,and bring serious economic losses to the dairy industry.Through in-depth analysis of various causes of cow haemolactia,such as mechanical injury,poisoning,infection,etc.,this paper expounded the clinical symptoms and diagnostic methods of the disease,put forward prevention and treatment measures by different means such as western medicine and Chinese and Western medicine,and provided theoretical support for the healthy breeding of cows with examples.

It can be seen from the statements of listed companies in the first three quarters of China that the top brands of dairy industry continue to grow at a high speed,but the growth rate of profits has slowed down. The performance of regional dairy enterprises has differentiated,and the profit has generally declined.The sales and profits of specialty dairy products have generally increased.The World Cup competition in the fourth quarter prompted domestic dairy enterprises to launch sports marketing,and Mengniu became the biggest winner. In the double"11" promotion,the strong is still strong.In December,the Spring Festival sales war began and the market competition was fierce. The new products in the fourth quarter showed the characteristics of high value,high nutrition and origin,which fully showed that consumers' demand for dairy consumption upgrading was obvious. With the gradual recovery of the market,such products will have a broad market.

    Melatonin Biosynthesis and its Effect on Reproductive Performance

    Melatonin is a hormone that widely exists in animals. It can not only regulate the circadian rhythm of animals,but also affect the reproductive performance of animals in many ways. For seasonal breeding animals,melatonin shows the effect of inhibiting or promoting reproductive performance according to the change of sunshine duration. In young animals, melatonin inhibits estrus,while it promotes estrus after maturation. Melatonin mainly regulates animal reproductive activity through the hypothalamic-pituitary-gonadal axis. In addition, melatonin can also directly act on the reproductive system and even the early embryo to improve animal reproductive performance by improving the anti-inflammatory and antioxidant functions of tissues and cells. At present,melatonin can be used to treat mental diseases and inflammation, promote animal reproduction,and regulate circadian rhythm,which is a hot topic in related research fields. In this review,the biosynthesis and secretion regulation of melatonin were described in detail. Combined with the physiological functions of melatonin,the effects of melatonin on animal reproductive performance and assisted reproduction were elaborated.

    Effects of Gelatin Dosage and its Compound Colloid on the Quality of Milk Jelly

    [Objective]Milk jelly often loses water during storage.In order to improve the quality and water retention of milk jelly during storage. [Method]The quality of milk jelly was evaluated by the texture characteristics,water holding capacity,and sensory quality indicators of milk jelly at different times. The effect of the amount of gelatin added and the combination of gelatin and carrageenan on the quality of milk jelly was explored. [Result] With the increase of the amount of gelatin added,the hydration rate,resilience and elasticity gradually decreased,the hardness and chewability gradually increased,and the sensory quality first improved and then decreased. The quality of milk jelly was the best when the amount of gelatin added was 1.8%;When the total colloid dosage is 1.8%,the proportion of carrageenan increases,the water setting rate and elasticity change slightly,the hardness first increases and then decreases and then increases,the chewability first decreases and then increases,the resilience decreases,the sensory quality first decreases and then increases,and finally continues to decrease. When the proportion of carrageenan is 7%,the quality of milk jelly is the best. [Conclusion]Adding 7% carrageenan and gelatin at 1.8% colloid addition can improve the storage quality of milk jelly,and the colloid combination can improve the quality decline of milk jelly during storage.

Meanwhile,the market of high-grade milk is experiencing smooth growth due to the extensive influence of Telunsu and Jindian,high-grade milk. The consumption of high-grade milk has been being an obvious trend. It is especially clear in offline market that the local brand of high-grade milk provides consumer with diverse choice for upscale market and super upscale market. The high-grade milk of local brand in offline market takes two-thirds market shares. The times ruled by TJ have been being the history. Meanwhile,with local brand activeness and upscale market variety,it is clarified enough that the concept of emphasizing standardization and pure nature can’t exist in the same product simultaneously.

    Safe Preparation of Cow Recycled Manure Solids(RMS)

    [Objective] The problem of fecal pollution in large-scale dairy farms has become increasingly prominent and has become an important factor restricting the sustainable development of dairy farming. Using Recycled Manure Solids(RMS)for cows is one of the effective ways to realize the harmless and resource utilization of cow dung. [Method] The solid cow dung with different dry matter contents(30%~35%, 35%~40%,40%~50%) was stacked and fermented. By comparing the temperature of different dry matter cow dung stacks,the change trend of harmful microorganisms,and the comparison of physical and chemical properties after stacking,the optimal safe preparation process of RMS materials was established,and its impact on the incidence rate of mastitis was evaluated. [Result] 35%~40% dry matter content of cow dung was piled into a trapezoidal fermentation stack with a height of 1.2 m,a bottom width of 1.5~2.0 m,a top width of 1.2 m,and a length of 20~30 m. After the 4th day of fermentation,the temperature of the surface and middle layers of the fermentation stack reached above 60 ℃.The fermentation temperature above 60 ℃ for 24 hours can kill 100% of the pathogenic microorganisms of mastitis.After the fermented cow dung is dried to make its dry matter content reach 45%~50%,mixed with 0.1%~0.2% quicklime can be used as bedding material. [Conclusion] After 35%~40% dry matter content of cow dung is fermented,and the fermentation temperature is above 60 ℃ for 24 hours,it can kill 100% of the pathogenic microorganism of mastitis. After fermentation,the dry matter reaches 45%~50% after drying,mixed with 0.1%~0.2% quicklime can be used as bedding material. The preparation time of RMS material is the shortest, and the use effect is the best.

    The development of modern large-scale cattle farms has been rapid, providing a large amount of high-quality milk and meat for citizens. However, at the same time, the amount of waste such as feces and sewage produced by these farms has increased, and most of them cannot be properly treated. The accumulation of manure in the production area not only causes pollution to the surrounding soil, air, and water bodies but also affects the normal breeding and production order of the cattle farm. This seriously harms the ecological environment and affects the green and sustainable development of the cattle industry. Therefore, the problem of treating and utilizing cow manure as a resource needs to be urgently addressed. To stabilize and safely handle the manure, this paper proposed to utilize the manure from large-scale cattle farms as a resource. This not only solved the problem of manure pollution in cattle farms but also maximized the utilization of manure resources, which was of great significance. This paper analyzed the nutritional composition of cow manure and the environmental pollution caused by manure from large-scale cattle farms. The purpose, principles, and expected effects of resource utilization of manure were briefly described. Existing methods of cow manure resource utilization were also introduced, including energy utilization, substrate utilization, feed utilization, fuel utilization, fertilizer utilization, and the reuse of oxidized pond fermentation. By analyzing various resource utilization technologies and applying them according to specific situations, or implementing multiple technologies in combination, the limitations of a single technology can be avoided. This paper provided a reference for the treatment of manure in different breeding environments and provided a reference for the low-carbon and sustainable development of modern cattle farming.In the future, efforts should be made to further promote the resource utilization of manure from large-scale cattle farms. Scientific and reasonable plans for manure treatment and resource utilization models should be developed in various regions. The quality of the surrounding environment should be monitored, and effective control measures should be taken to promote the healthy development of animal husbandry and lay the foundation for the circular economy and comprehensive utilization of the animal husbandry industry.

    The contamination of fresh milk with pathogenic microorganisms seriously affects the quality and safety of milk and its products. This paper analyzed the sources of contamination by pathogenic microorganisms, and analyzed the hazards of 37 pathogenic microorganisms that may be carried in raw milk and have an impact on consumers' health, and clarified the risk ranking of pathogenic microorganisms that need to be controlled as a priority, so as to provide technical references for the recognition, prevention and control, and risk assessment of pathogenic microorganisms in the whole industrial chain of raw milk in China. At the same time, combining the different production modes of raw milk in China, this paper proposed measures to reduce the pathogenic microorganisms that affect consumers' health: the breeding process should strengthen the microbiological control of feed, barn and cattle; the milking process should strengthen the microbiological control of milking tools, milking staff, and medicine bath; the storage and transportation process should strengthen the microbiological control during storage and transportation. These targeted prevention and control strategy recommendations will promote relevant parties to follow up on raw milk quality and safety control in a timely manner to reduce the risk of dairy consumption.

    Melatonin,as a multifunctional active factor,has a very important role in livestock production. In recent years,research on high content of naturally expressed melatonin milk has been carried out on a large scale and the demand for the determination of melatonin content in milk has increased. The most common methods for melatonin determination are gas chromatography(GC),gas chromatography-mass spectrometry(GC-MS),high performance liquid chromatography(HPLC),high performance liquid chromatography-mass spectrometry(LC-MS), radioimmunoassay(RIA),enzyme-linked immunosorbent assay(ELISA),and ultraviolet spectrophotometer(UV). This paper introduced these methods in terms of principles,characteristics,advantages and disadvantages,and briefly compared the application of each method to provide some reference for the subsequent related research and application.

    [Objective]To study the effect of storage temperature and time on shelf life of pasteurized milk.[Method]The fresh pasteurized milk treated at 75 ℃,15~20 s was used as the research objective. The storage conditions of pasteurized milk at 6 ℃,10 ℃,15 ℃ were analyzed,changes of coliform group, total number of colony,acidity and sensory quality of samples.[Result]When pasteurized milk was stored at 6 ℃,the quality of the product could be controlled and guaranteed,and no spoilage occurred within 7 days,while when pasteurized milk was stored at 10 ℃,the quality of the product was guaranteed within 6 days,the quality of pasteurized milk was guaranteed in 3~4 days and began to deteriorate in 4~5 days after storage at 15 ℃.

    In 2022,China's milk production will reach 39.32 million tons,up 6.8% year on year.The output of dairy products was 31.18 million tons, up 2% year on year. The production of raw milk is sufficient,but the production has declined significantly,and the dairy market has entered a short-term adjustment stage. From the perspective of consumption changes,consumption degradation,consumption translation and consumption upgrading coexist,and dairy consumption has structural differentiation.From the perspective of product changes,low-temperature fresh milk has entered a comprehensive competitive stage and will replicate the development path of normal-temperature dairy products.The basic products of normal temperature milk increased rapidly,but the price competition was fierce.In the process of price reduction and price recovery of middle and high-end dairy products,the role of brand value is obvious.With the arrival of an aging society,adult milk powder has become a hot product in the market,and more and more enterprises have joined in the competition of this category.In order to explore new growth points in the market,dairy products such as ice-cream,milk wine,cheese and so on are valued.From the perspective of channel changes,online channels have received more attention from enterprises,and offline channels have also emerged new formats which are driving the channel reform of dairy enterprises.

    By analyzing the fluctuation of raw milk price,imported breeding cattle and the growth rate of raw milk production of Chinese dairy farming industry after 1980,this paper proposed that the existence of the Chinese dairy cow cycle similar to typical husbandry cycles.The Chinese dairy cow cycle has a cycle length of 8 to 9 years,which can be further divided into two stages:prosperity and depression.The mismatch between the supply and demand of raw milk caused by the unbalanced growth rate of consumption,the irrationality of practitioners,and the longer cycle of dairy cow reproduction may be the deep cause for the cycle.Through replacement of four round cycles,positive changes have taken place today in the industrial quality,integration of farming and processing and modernization for Chinese dairy industry.The proposal and research of Chinese dairy cow cycle have positive function to industry management and enterprise operation.

Firstly,strictly quarantine entry-exit animals,prohibited to introduce cattle from the epidemic area. Secondly,strengthen feeding management and improve health conditions,and carry out quarantine regularly. Finally,develop a rational immunization program. Once a suspicious case is found,measures such as quarantine,lockdown,disinfection and emergency vaccination should be taken immediately. In addition,there is no specific drug for the treatment of IBR,so symptomatic treatment with antibiotics can be taken,and traditional Chinese medicine can be combined to improve the cattle's immune function.

    Escherichia coli O157:H7 is one of the most serious food-borne pathogens of Escherichia coli,which mainly exists in beef,milk,fruit and their products,does great harm to people’s health,even death. Therefore,the detection of Escherichia coli O157:H7 in food is particularly important. In this paper,the domestic and foreign standards for the detection of diarrheal Escherichia coli O157:H7 were compared,and it was suggested that our standards should be strengthened in the aspects of sample pretreatment,rapid screening methods,etc.,in order to provide help for the rapid and accurate detection of the bacteria,to achieve the construction of international standard system to meet the needs of laboratory testing.

    [Objective]To investigate the incidence and control status of ketosis in dairy cow on large-scale pastures in China in 2021. [Method]A total of 105 large-scale farms were selected to investigate the basic situation of ketosis,including the incidence,diagnosis and monitoring methods,treatment methods,cure rate,prevention and control methods,and treatment costs. [Result]The results showed that the average yield of dairy cow was 9.7 t per unit area,and the average incidence of ketosis was 17.9%,which was higher than the control target required by foreign countries. The detection of blood β-hydroxybutyric acid concentration is the main method for the diagnosis and monitoring of ketosis in dairy cows in most pastures. The cure rate of ketosis in dairy cows is more than 90% regardless of single or comprehensive measures,and the effect of comprehensive prevention and control of ketosis in dairy cows is significantly better than that of single measure. At the same time,the corresponding summary and suggestions are given. However,more research is needed on the incidence control target,diagnosis and monitoring,treatment,prevention and control of ketosis in dairy cow on large-scale pastures in China,and the corresponding technical specifications need to be improved and formulated to provide technical support for the efficient prevention and control of ketosis in dairy cow on large-scale pastures.

    As an source of nutrition in the human diet,dairy products play an important role in maintaining and improving human nutritional health.In order to understand the nutritional characteristics of dairy products and their impact on human health,this study focuses on summarizing the latest research progress related to nutrition and health of dairy products,so as to explore the effects of dairy products on human bones,cardiovascular,body weight and intestinal health. Through literature review,it is found that dairy products contribute to bone health and prevent osteoporosis and cardiovascular diseases.Among them,protein and fat are involved in weight management,maintaining satiety and metabolism,and lactic acid bacteria are also beneficial to intestinal health. The findings will provide a theoretical basis for promoting the development of dairy nutrition and health research and providing more scientific and reasonable dietary recommendations to the public.

    The perinatal period is a special physiological period for dairy cows.During this period,the dairy cows undergo physiological and environmental changes such as pregnancy,calving,and lactation,as well as changes in dietary intake and feeding environment,and are extremely prone to negative energy balance.It is a period of high incidence of various metabolic disorders such as ketosis,eugastric translocation,and retained placenta,with irreversible effects on subsequent production and reproductive performance.This paper reviewed the causes,effects and measures to improve the negative energy balance of dairy cows,with the aim of providing theoretical and technical references for healthy periparturient dairy farming.Reduced feed intake and nutritional deficiencies are the main causes of negative energy balance,resulting in reduced lactation performance,reproductive performance and immunity in cows.To solve these problems,reasonable nutritional and management control measures should be taken,such as changing the nutritional composition of the diet while ensuring that the composition of the diet remains unchanged,and adjusting feeding management programmes according to the physiological characteristics of cows at different times,in order to improve negative energy balance,according to the different energy requirements of cows before and after the perinatal period.

    In order to promote the revitalization of the dairy industry,the National Dairy Industry Science and Technology Innovation Alliance initiated and implemented a special research project to promote the sustainable development of the dairy industry -- high-quality milk Project in 2016,which covers three aspects: establishing a high quality milk labeling system,promoting the upgrading of dairy farming technology,and comprehensively implementing the standardization and supervision of dairy processing technology. The quality evaluation method of high quality dairy products based on active enzymes,active proteins and furosine is proposed in the high quality milk labeling system. At present,the commonly used detection methods for furosine and lactoferrin include high performance liquid chromatography,liquid chromatography mass spectrometry,capillary electrophoresis mass spectrometry,etc. High performance liquid chromatography is the most commonly used detection method,but the pretreatment time is long and the process is complex,and the sample purity is high. Liquid chromatography-mass spectrometry (LC-MS) is sensitive,but the equipment is expensive and the requirement for operators is high. Capillary electrophoresis mass spectrometry has a good separation and detection effect on biological macromolecules,but the interface between capillary electrophoresis and mass spectrometry still has some defects,high maintenance cost,poor detection repeatability. This paper described the detection methods of furosine and lactoferrin in high-quality milk,compared the advantages and disadvantages of the methods. The aim is to provide reference for further developing a new method for the detection of furosine and lactoferrin in high quality milk.

    Milk production of western dairy developed countries in the past three years did not rise significantly caused by the rise of milk prices, which reflects the maturity of dairy industry. The reduction of export pressure to China also vacated some space for the development of China's milk production. From 2019 to 2023, China's milk production achieved a compound annual growth rate of 7%, far exceeding the average milk consumption growth rate of 4% in the past 15 years, resulting in an oversupply of raw milk and large-scale losses for farms in 2023, and the "cow cycle" has fluctuated significantly. It is expected that the industrial depression period will continue for about 2 years, and the internal industrial structure of the dairy farms will continue to adjust, and small and medium-sized dairy farms will bear the brunt, which requires the industry to pay close attention and work together to overcome the difficulties. In the medium term, the annual growth of 100,000 to 150,000 dairy cattle can meet the growth of milk consumption in China. During the adjustment period, industrial innovation can be made in the aspects of reducing dairy cow, optimizing herd structure, promoting the combination of dairy farming and crop, and optimizing dairy product processing structure.

    There are different kinds of proteins in milk,and the configuration and efficacy of milk proteins of different genetic variants are different. Casein typing identification methods include gene identification,capillary electrophoresis identification,high performance liquid chromatography identification,etc. In this paper,the typing and identification methods of K-casein and β-casein with different configurations were compared,and the precision and recovery rate of the HPLC chromatographic identification method were mainly verified. Meanwhile,the method was applied to the typing and identification of raw milk and dairy casein to distinguish the types and proportions of genetic variants in cattle in different pastures. This method can guide the pasture to breed dairy cows quickly,produce raw milk with different casein types,and process different types of high quality dairy products.

    The nutrient components of milk powder is rich.In order to ensure the stability of the product and avoid the swelling during the shelf life,the milk powder is mostly packaged in the form of modified atmosphere packaging and form a certain degree of vacuum.Canned milk powder was prepared and tested for the vacuum degree under different conditions.In this paper,the influence of storage time,gas ratio and storage temperature on the formation of vacuum in different canned milk powder was studied.The factors influencing the formation of vacuum degree in canned milk powder were studied by long-term tracking test.The results showed that with the increase of storage time,the vacuum degree in the can increases rapidly at first and then tends to be flat.The proportion of carbon dioxide has a significant effect on it,and the vacuum degree of products stored at 37 ℃ and 47 ℃ is greater than that of normal temperature.

    Analysis of Influence of Different Milking Times on Milk Yield of Dairy Cows

    [Objective]To analyze the improvement of milk yield of lactating cows at different stages by increasing milking times,and find out the best milking management scheme,so as to provide theoretical basis for effectively improving pasture benefits.[Method]The lactating cows were randomly divided into two groups to ensure that the average milk yield at different parity and calving stage was the same. After grouping,the two groups were milked three times and four times for one month,respectively. The milk yield of cows with different milking times in pasture was summarized and analyzed statistically.[Result]Increasing milking times could effectively improve milk yield of cows (P<0.05). The increase of milking times of dairy cows with milk yield higher than 45 kg was significantly higher than that of cows with milk yield lower than 45 kg (P<0.05).Increased milking times significantly increased the yield of first-born cows by 2.33 kg, second-born cows by 2.31 kg,and third-born cows by 2.78 kg (P<0.05). In different lactation stages,increasing milking times could effectively increase milk yield in early lactation and peak milk production (P<0.05).[Conclusion]Increasing milking times can effectively improve milk yield of cows,and the improvement effect is the best for cows with high yield and at the early and peak milk production.

    The dairy industry is a representative sector of China's food safety. The revitalization of dairy industry is the core power of rural modernization and the healthy support of rural development.in order to further promote the development of the dairy industry,this paper analyzed the number of dairy cows,yield per cow,and milk production in China from 2012 to 2021. It also examined the prices of corn and soybean meal in each month of 2022,the carbon emissions of the entire dairy industry chain from 2010 to 2020, and the national per capita milk consumption from 2012 to 2021. The analysis reveals that the dairy industry faces challenges such as high feed costs,pressure to reduce carbon emissions,and insufficient consumer confidence. In response to these challenges,the paper proposed recommendations such as optimizing feed supply, improving nutrient balance,implementing scientific feeding practices, cultivating and creating market demand, and developing markets in third- and fourth-tier cities and rural areas.

    [Objective]In order to ensure the stability of yoghurt drinks during the shelf life,[Method]Take the average centrifugal sedimentation rate of the best-selling yoghurt drinks on the market as a comparison to study the influence of key factors in the production process on the stability of yoghurt drinks. [Result]In the industrial production of sterilized yoghurt drinks,the two factors that have the greatest impact on the stability of the product are the dissolution temperature of emulsion stabilizer and homogenization process. Increasing the dissolution temperature and adding a homogenization after the end of the fermentation can significantly improve the stability of yoghurt drinks. [Conclusion]The results will provide technical guidance for dairy enterprises to improve the stability of yoghurt drinks.

    [Objective] To study and compare the quality changes of homemade yogurt and commercial yogurt during storage. [Method] The quality changes of homemade yoghurt during fermentation were studied by means of lactic acid bacteria count,acidity and pH,and then compared with commercial yoghurt. [Result] In the process of homemade yogurt,3 h after fermentation,with the accumulation of lactic acid, the acidity increased,the pH value decreased,and the viable number of lactic acid bacteria increased significantly. After 7 h fermentation,the total number of lactic acid bacteria began to decrease,and the increasing trend of acidity and the decreasing trend of pH slowed down. In the storage stage,with the increase of storage time,the quality changes of all kinds of yogurt are basically the same,the content of lactic acid bacteria first increases and then decreases,the pH value decreases,and the acidity increases. Under the condition of 4℃ storage,the quality change is less than 25℃. [Conclusion]The quality of yoghurt decreases more slowly under refrigerated treatment. When making or buying yoghurt,we should choose refrigerated treatment as much as possible and drink it as soon as possible after opening the cover. The two kinds of yogurt have different characteristics,and consumers can choose according to their needs. In conclusion,this study provided a reference for the safe storage of yogurt.
