乳制品加工设备结垢与清洗综述

摘要: 乳制品加工设备中污垢主要分为“冷表面”污垢与“热表面”污垢,其形成受到牛乳成分、操作条件及换热器类型的影响。二者组成成分和结构质地差异造成了不同的去除难度。原位清洗系统是针对去除污垢而设计的乳制品加工设备配套设施,通常分为“一次性原位清洗系统”和“可回收原位清洗系统”,原位清洗的机理涉及水的溶解作用、热能作用、机械作用、界面活性作用、化学作用等,实施过程中清洗剂的配方、浓度、温度、时间、流速、配置用水的水质都会对清洗效果和效率造成影响。

Abstract: The fouling in dairy processing equipment is mainly divided into cold surface fouling and hot surface fouling,the formation of which is affected by milk composition,operating conditions and the type of heat exchanger.The difference in composition and structure of the two causes different removal difficulties. The cleaning-in-place system is designed for removing fouling in dairy processing equipment supporting facilities, usually divided into single-use cleaning-in-place system and recyclable cleaning-in-place system,the mechanism of cleaning-in-place involves the dissolution of water,hermal action,mechanical action,interfacial activity and chemical action. The formula,concentration,temperature, time,flow rate,and water quality of the detergent will all affect the cleaning effect and efficiency during the implementation process.
